These sheet pan shrimp fajitas are an incredibly flavorful and easy-to-prepare seafood dinner to serve on any family weeknight meal! Tender, juicy pieces of shrimp are cooked with bell peppers, onion, cilantro, and seasoning for a super tasty meal that everyone loves! Toss everything together and cook on the same sheet pan for minimal fuss and a quick clean up too!

Sheet Pan Shrimp Fajitas Recipe

There's something wonderful about a dinner that only dirties one dish and pleases the whole family! That's one of the things that I really love about sheet pan meals, but making sheet pan fajitas has got to be one of my all-time favorites!

No matter what the family is up to on any given day, I can make these super quick and easy sheet-pan shrimp fajitas in 20 minutes or less! They're full of wonderful flavor and are a filling, healthy dinner!

🥘Sheet Pan Shrimp Fajitas Ingredients

Keep to the bell peppers and omit the jalapeño if you want your fajitas on the milder side. You can always buy your favorite brand of flour tortillas, but I prefer making them from scratch - trust me, it's easier than you think!

  • Shrimp - 1 ½pounds ofshrimp(thawed and deveined).
  • Bell Peppers - 3bell peppers(green, red, orange, or yellow - thinly sliced).
  • Red Onion - 1smallred onion(thinly sliced).
  • Cilantro - ¼cupof cilantro (or use a cilantro substitute).
  • Chili Powder - 1teaspoon of chili powder(or use a chili powder substitute).
  • Garlic Powder - ½teaspoonof garlic powder.
  • Ground Cumin - ½teaspoonof ground cumin.
  • Smoked Paprika - ½teaspoon ofsmoked paprika.
  • Salt & Pepper - ½teaspooneach, salt & pepper(to taste).
  • Jalapeno (optional) - ½jalapeno pepper.
  • Lime - 1lime(zest & juice).
  • Olive Oil - 2tablespoons of extra virginolive oil(EVOO).
  • Flour Tortillas - 8flour tortillas; you can make my homemade flour tortillas or use your favorite brand.

🔪 How To Make Sheet Pan Shrimp Fajitas

After you prepare your shrimp fajita ingredients, then all of the hard work is over! You will need a knife, a cutting board, aluminum foil, measuring utensils, and a baking sheet to get started!

This easy recipe will make around 8 servings of shrimp fajitas! Load them up in tortillas, and you'll have a filling dinner.

  1. Prep. Preheat your oven to 450°F(232°C)and line your sheet pan with aluminum foil for easy cleanup, if desired.
  2. Season. Place 1 ½pounds of shrimp, 3 sliced bell peppers, 1small sliced red onion, and ¼cup of cilantro on the sheet pan. Sprinkle seasoning over the fajita ingredients, including 1teaspoon of chili powder, ½teaspoonof garlic powder, ½teaspoonof ground cumin, ½teaspoon of smoked paprika, ½teaspoon salt, and ½teaspoon of pepper.
  3. Toss ingredients. Zest and squeeze the lime over the sheet pan ingredients, then drizzle with olive oil. Toss the fajita mix with tongs or hands until well coated with oil and seasoning.
  4. Cook fajitas. Cook in the oven at 450°F(232°C) for 8 minutes, then set your oven to broil for another 2-3 minutes until the shrimp are fully cooked.
  5. Serve. Remove from oven and serve in warmedflour tortillas.

Top your shrimp fajitas off with salsa verde or fresh pico de gallo! They will taste excellent with your favorite Mexican side dishes like these refried black beans, or you can check out my post onwhat to serve with fajitas! Enjoy!

💭 Angela's Tips & Recipe Notes

  • If you're using frozen shrimp, be sure to set them in the refrigerator the night before or the morning you plan on cooking them. You can also use cold water to thaw your shrimp, and it takes about an hour to thaw a one-pound package of frozen shrimp per USDA-safe defrosting methods.
  • If you'd like to use afajita seasoning instead, you can use 1 ½ tablespoons in place of the other seasonings.
  • Tortillas can be wrapped in aluminum foil and placed in the oven with shrimp fajitas sheet pan to warm or on the sheet pan with the fajita mixture. Just move everything over to ⅔ of the sheet pan and place the tortillas on the remaining side for about 5 minutes of the cooking time (before broiling)

🥡 Storing & Reheating

Allow the shrimp fajitas to cool completely to room temperature, then place them in an airtight container. Store them in your fridge for up to 3-4 days.

Freezing Shrimp Fajitas

Once the fajitas have cooled to room temperature, transfer them to an airtight container or freezer-safe plastic bag and freeze them for up to 3 months. When you're ready to serve them again, simply thaw the fajitas in the refrigerator overnight, then transfer them to a baking sheet and bake as directed.

Reheating Shrimp Fajitas

To reheat, preheat your oven to 350°F(175°C). Place the fajita mixture on a baking sheet with aluminum foil and bake for 10-15 minutes or until heated through to your liking.

Can I Use Frozen Shrimp To Make Sheet Pan Shrimp Fajitas?

Yes! If you have a package of frozen shrimp, you can use them for this recipe! Make sure to completely thaw out the shrimp beforehand by either placing them in the fridge overnight or using cold water to thaw them completely through for about an hour.

What Toppings Can I Add To My Shrimp Fajitas?

You can add a variety of toppings to your shrimp fajitas! My favorites are shredded cheese, sliced avocado, sour cream, and salsa. You could also add chopped cilantro, shredded lettuce, guacamole, chopped tomatoes, or jalapenos!

Can You Freeze These Sheet Pan Shrimp Fajitas?

Absolutely! Cook the shrimp and vegetables as directed, then store them in a heavy-duty plastic bag. Press all of the air out of the bag and transfer it to your freezer and freezer for up to 3 months. Thaw your fajitas in the fridge overnight and follow my reheating directions.

  • 1 ½ lb shrimp (thawed and deveined)
  • 3 bell peppers (green, red, orange or yellow - thinly sliced)
  • 1 small red onion (thinly sliced)
  • ¼ cup cilantro
