My grain-free granola recipe is a breakfast cereal combo made without oats. It’s a great alternative to my Nut-Free Granola or my Steel Cut Oats Granola.

It is made of nuts, seeds, coconut, and unrefined sugar. It is a vegan, gluten-free cereal recipe, easy to make ahead to meal prep your breakfast for the week.

Consequently, it contains fewer carbs meaning it is a vegan keto breakfast too if you use sugar-free flavored maple syrup and omit the dried cranberries.

  • Nuts – the nuts used in this recipe, sliced almonds,and pecan, are low in natural sugar and perfect on a keto vegan diet to add healthy fat.
  • Seeds – pepitas, chia seeds, and flax meal are 100% keto-approved and high in fiber and protein.
  • Coconut oil – keto approved!
  • Liquid sweetener – that is where you have to be very careful! Maple syrup contains sugar, and therefore you can’t use it for this recipe. Otherwise, Monk fruit syrup with maple flavor will be perfect. It contains zero carbs and barely any calories.
  • Dried cranberries contain lots of sugar. Simply omit or replace it with freeze-dried raspberry for the no-added-sugar dry fruit option.

How To Make Grain-Free Granola

You know there is two opposite diet in my house, I eat keto recipes, and my husband eats vegan.

That is why I love to provide vegan keto recipe options on this blog. There is nothing easier than making this recipe.

  1. Begin by preheating your oven to 320°F (160°C) and line a large baking tray (or two medium-size trays) with parchment paper. This ensures easy cleanup and prevents sticking.

  1. In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, coconut flakes, ground cinnamon, and salt. Stir vigorously to ensure an even distribution of all ingredients.
  2. In another bowl, combine the coconut oil, maple syrup, and ground cinnamon. If the coconut oil is solid, microwave the mixture until it’s melted. Alternatively, warm it in a saucepan over medium heat.

  1. Pour the liquid mixture over the dry ingredients. Stir vigorously for about a minute, ensuring all the dry ingredients are well coated with the liquids.
  2. Transfer the granola mixture onto the prepared baking tray. Bake for 25-30 minutes, stirring every 5 minutes to ensure even cooking. Keep a close eye, especially on the edges, as they tend to cook faster.
  1. The granola is ready when it turns golden, fragrant, and crispy. Remove the tray from the oven.
  2. Allow the granola to cool entirely in the baking tray. This usually takes about an hour. Placing the tray next to an open window can speed up the cooling process.
  3. Once cooled, stir in dried cranberries for a burst of sweetness. Omit this step if you’re following a keto vegan diet.

  • Customize Your Mix: Feel free to customize the recipe by adding your favorite nuts, seeds, or dried fruits for a personal touch.
  • Even Clusters: Stirring the granola during baking helps in forming clusters. Don’t skip this step for that perfect crunch.
  • Monitoring Oven Temperature: Keep an eye on the granola, especially towards the end of the baking time, to prevent burning. Adjust the oven temperature if needed.
  • Storage: Ensure the granola is completely cool before storing to maintain its crispiness. A sealed glass mason jar works best for preserving freshness.

  • 1 cup Cranberries - dried – don't use if keto vegan

Instructions

  • Preheat the oven to 320°F (160°C). Line a large baking tray (or two medium-size trays) with baking paper. Set aside.

  • In a large mixing bowl, add all the dry ingredients. Stir vigorously to evenly combine all the ingredients.

  • In another bowl, add the coconut oil, maple syrup, and ground cinnamon.

  • Microwave until the coconut oil is melted. Otherwise, add those ingredients into a saucepan and warm under medium heat until the coconut oil is melted.

  • Pour the liquid ingredients onto the dry ingredients. Stir for about 1 minute to make sure all the ingredients are covered with the liquids.

  • Transfer the cereals onto the prepared baking tray.

  • Bake for 25-30 minutes. Make sure you stir the mixture every 5 minutes, especially on the sides of the tray (it cooks faster on the borders)

  • The cereals are cooked when it is golden, fragrant and crispy.

  • Remove the tray from the oven and cool entirely in the baking tray. It usually takes 1 hour. You can place the tray next to an open window to cool faster.

  • The cereals will get crispy and form clusters while cooling down. Stir in the dried cranberry or omit this step if you are on a keto vegan diet.

  • Store your cereals for up to 3 weeks in the pantry in a glass mason jar.

  • This recipe makes 18 cups of granola and serves 18 breakfasts. I recommend a regular breakfast serving of 1/3 cup of granola with 1/2 cup of plant-based milk like almond milk or coconut milk.

Notes

Keto Vegan Note

  • Maple syrup contains sugar, and it is not keto-friendly. However, you can replace maple syrup with Monk fruit Sugar-free Syrup. It is sugar-free, vegan and it will add the same sweet flavor to the granola.
  • Dried fruits contain sugar, don’t add the cranberries if you are on a keto vegan diet. You can replace it with dried freeze raspberry if desired for a low-sugar fruit.

    • Simply because the nuts flavor an texture change after that, they get softer and I don’t appreciate the flavor as much. It is a personal recommendation, it will still be good after that. Enjoy the recipe, Carine

    • Sugar free syrup has no sugar and therefore doesn’t crystalize as maple syrup.
