For a mum on the go, that needs a fast but good looking dish for a party, this is a winner! Pop some berries or drizzle passionfruit on top. 10 minute chef!
Ingredients (serves 10)
- 400g condensed milk (1 tin)
- 250g philadelphia cream cheese softened
- 300g thickened cream
- 1 packet scotch finger biscuits
- 1/2 cup lemon
Method
- Lay scotch finger biscuits across base of cake dish.
- Blend together condensed milk, cream cheese and cream.
- Slowly add in lemon. Taste as you go to get the right strength. I don't' usually use the full amount, as I don't like it very tart.
- Pour mixture on top of biscuits.
- Place in fridge to set overnight.

Not sure the cream/cheese will set without gelatine, but do like the idea of not crushing the biscuits and using butter to set it all again. Thanks for your recipe.

I make a cheesecake in less than 15 minutes but I prefer to crush the biscuits. Love this recipe but how do you get it to set firmly if no gelatine is used?

I’ll try this as it’s easier than my recipe. I usually use ginger biscuits, so I will have to get a score from the family compared to the usual one they love!

Yum, I never thought to use Scotch finger biscuits for the base. I am a little disappointed that its 10 minutes to make – it still needs to set in the fridge overnight.

Yummo except I’m not a fan of scotch finger biscuits so I’ll have to use something else but other than that, this should delish. Lemon is such a refreshing flavour!

This would seriously have to be the best recipe ever. And can be my first attempt at a cheesecake. We love cheesecake, however I’ve never made it, we only buy it. Look out, here I come.
